Mediterranean Lunch Salad
Inspired by the salads made for us on the boat in Croatia, this is my version of a filling, mediterranean lunch salad! It’s easy to make and tasty for several days.
Ingredients:
Approx. 1 cup of each of the following:
Cooked rice
Garbanzo beans (or 1 can, rinsed)
Diced cucumber
Diced tomatoes
Diced Kalamata olives
Crumbled feta cheese (nothing we have here seems to be anywhere near as good as we had in Croatia, but it'll do…)
Dressing:
A drizzle of olive oil
A splash of red wine vinegar
Salt & Pepper to taste
Directions: combine everything in a bowl, go find a boat and enjoy!!
