Recipe: Bitchin’ Friday Night Tacos
I have always thought that people who are able to smoothly pull off calling anything “bitchin’” are just inherently cooler than the rest of us. I’m not quite there myself, but I am definitely cool enough for Bitchin’ sauce and I am here to pass that coolness on to you, my friends.
Gather your Ingredients:
Chicken
Taco Seasoning - I found this one at Trader Joe’s, I like it because it doesn’t have any extra ingredients
1/2 yellow onion
1 bunch hearty greens: kale, collard greens, rainbow chard…choose your favorite
2 Poblano Peppers (did everybody else know that Pasilla peppers and Poblano peppers are one and the same??)
Jicama wraps from TJs or Corn tortillas
Bitchin’ Chipotle Sauce
Optional Toppings:
Tomatoes
Avocado
Fresh cilantro
Salsa - if you’re feeling extra saucy
Directions:
1. Cook and shred the chicken. Add the taco seasoning, per the instructions after chicken is shredded.
2. Saute the onion, greens, and poblano peppers together. Season to taste with salt, pepper, garlic, and cumin.
3. Assemble your tacos!
These tacos are good on any day that ends in Y. But we all know that everything tastes better on Fridays.
