Recipe: Lentil Delight

I cannot take all the credit for this recipe. I learned it from someone else (as soon as I remember whom, I will happily give them credit). I did however embellish it, as I love to do. I like making a full batch of this and having it on hand for a snack or small lunch. It also makes a nice side dish! Basically, it’s just good.

Ingredients: You’re going to want to shop at Trader Joe’s for this one.

1 package cooked lentils

1 package bruschetta

1 small package crumbled feta cheese

2-3 persian cucumbers, cut into quarters and then sliced

a couple handfuls of cherry tomatoes, cut into halves or quarters

4 handfuls of chopped kale

Directions:

  1. Mix all ingredients in a large bowl.

  2. Eat.
