Recipe: Not-Pasta

This is not a knock on pasta, I’m a big pasta fan. But recently I was really craving the sauciness of pasta and the heft of potatoes. I realized there’s no rule that pasta sauce has to ONLY be used on noodles… so, Not-Pasta was born. Huzzah.

Ingredients:

8 ish Golden taters, cut into small pieces

1 lb ground beef

1 zucchini

1 jar of your favorite spaghetti sauce

Optional: cauliflower gnocchi from Trader Joes. Honestly, they taste a little weird, but it’s a way to get one more vegetable into your bowl.


Directions:

Sauté taters in some olive oil. Salt, pepper, garlic powder. Maybe add some water and a lid to speed up their cooking with a little steam. Make sure they are soft before adding ground beef.

Add ground beef and cook through. Add sauce to beef & taters and let simmer.

If you’re adding the cauliflower gnocchi, cook them in a separate pan.

Sauté zucchini with olive oil in a separate pan. Season with salt, pepper, and garlic salt.

Add everything to saucy mixture and let simmer for a few minutes to really soak in all the flavors.

Like I said, it’s not pasta, but it has all the best flavors of pasta.
