Recipe: Not Your Grandma’s Tomato Sandwich

I’m going to go ahead and begin by bragging: my Grandmom makes the BEST tomato sandwiches. They are simple and delicious: toasted bread, mayo, tomatoes, salt & pepper. As you know, I’m not such a mayo fan, but I will admit this is one of two food combos in which I think it tastes great. However, since I don’t buy mayo (it would just take up valuable fridge space at this point), I had to get a little creative to get my tomato sandwich fix today.

There are two versions here, because when I made the first one, I was very hungry and got a little carried away. It’s more of a breakfast sandwich now than the simple tomato sandwich it started as. Don’t worry, my Grandmom will understand. The second one is much closer to the classic tomato sammy.

Option Number 1: The Tomato Breakfast Sammy

Ingredients:

2 slices toasted bread (I happened to have some homemade gluten free bread from this recipe)

Your favorite hummus - I like the spicy one from TJs

1/2 a tomato, sliced- choose an heirloom if you’re feeling fancy!

1-2 over easy fried eggs

1 slice of pepper jack cheese

Directions:

I like to believe that you all know how to assemble a sandwich. If you don’t, call me and I’ll give you a private sandwich making tutorial. The key points for this one are to use the hummus in place of your mayo and sprinkle salt and pepper directly onto the tomato slices once they’re on the sando. This is crucial for optimal flavor goodness!

This is obviously not the most photogenic sandwich, but I’ll tell ya, it sure tasted good.

Option Number 2: The Modern Classic

2 pieces toasted bread

Cream cheese - I have been enjoying Nancy’s lately

1 small - medium tomato, sliced

Salt & pepper


Directions:

I really think you can handle this one…put all the things together. Sprinkle the salt & pepper on the tomaters at the end.
