Recipe: Nut Balls
I have been trying to track down this particular recipe for many moons, and a couple weeks ago it tumbled right out of the cookbook I was trying to convince myself I didn’t need to keep anymore. Sure showed me! This recipe is basically my friend Melissa’s Recipe for “Raw Vegan Donut Holes,” but minus one ingredient and renamed with the utmost maturity. Both versions are delicious and I highly recommend you check out Melissa’s other recipes, she’s the best.
Ingredients:
1.5 cups raw cashews
1/2 cup raw walnuts
1/4 cup shredded coconut
5 dates, pitted
1/4 cup maple syrup
1 tsp cinnamon
1 tsp Vanilla
Salt
Directions:
Combine all ingredients in a food processor and run until chunky. Roll into bite-size balls and store in freezer. Pro-tip: Keeping your hands wet when rolling them helps keep them from sticking to your hands. Easy peasy.
