Recipe: Roasted Artichokes + Dragon Breath Dip

It’s artichoke season! While they taste nice boiled, they taste even better roasted! Enjoy with your favorite dip, or the dragon breath dip* listed below. *not recommended for first dates.

Roasted Artichokes

Ingredients:

2 Artichokes

1 Lemon, 1/2 sliced

Olive Oil

Salt & Pepper

4 small cloves garlic

Directions:

Cut artichokes in half, spoon out the weird hairy bits in the middle (apparently it’s called the Choke) and rub the freshly cut side with 1/2 a lemon. This will help slow down the browning. Next, rub olive oil over the same sides and give them a sprinkle of salt and pepper. Place them face down with a little clove of garlic (unpeeled) in the center. Place a slice of lemon on top of each one and cover loosely with foil. Roast for 40-50 minutes at 375 degrees.

Dragon Breath Dip

Ingredients:

1 cup Whole Fat Greek Yogurt

1-5 cloves Garlic - depending on how willing you are to commit to dragon breath, chopped

Juice from 1/2 a Lemon

1 tbsp Fresh Dill, chopped

Directions:

Mix everything together and enjoy! It tastes even better the next day.
