Recipe: The Quinoa Salad You’ve BEAN Waiting For

Is there anything more satisfying that making a dish for your friends and having them all ask for the recipe?? Well, yes, but it’s still pretty nice. You may remember from this article on protein that quinoa is a complete protein, which makes this dish even more exciting. I hope you enjoy it!

Ingredients:

Salad:

2 cups cooked quinoa

1 can Great White Northern Beans

3-4 chopped Persian cucumbers

Dressing:

2 cloves garlic

1 TJ’s package of cilantro (Approx. 1/2-3/4 cup)

2 green onions

Juice of 2 limes

1 Tbsp rice wine vinegar

1 Tbsp maple syrup

1/2 cup-ish avocado or olive oil

Directions:

Combine dressing ingredients in a blender and whip them into a frenzy. Pour over combined salad ingredients and voilà, you have almost-instant greatness.
