Recipe: Zesty Summer Salad

While hiking recently, I heard about a delicious summery salad from a very popular local restaurant here in Santa Barbara. Instead of going to this restaurant and trying it, I decided to create one of my own in the comfort of my own tie-dye apron! I’m very grateful for the inspiration, so thank you, popular local restaurant and my new hiking friend!

Without any further ado:

Ingredients for the salad:

1 cucumber

1.5 white peaches (maybe 2 if they’re small)

10 fresh basil leaves

1/4 cup feta cheese

For the dressing:

1 tbsp fresh orange juice

1 tbsp fresh lime juice

1 tbsp fresh lemon juice

2 tbsp olive oil

1 tbsp white wine vinegar

1 tsp dijon mustard

Directions: they’re very complex this time, try to keep up…

  1. Cut the cucumber and peaches into small pieces and mix them together in a bowl. Chop up the basil and add it with the feta cheese.

  2. Combine dressing ingredients together and pour them alllllll over the salad. Mix well.

  3. Eat!
